Funny, I freeze all my San Marzanos and do the hot water trick.  You'll be surprised at how well it works to get the skin off.  Another neat trick is to then put the frozen tomatoes in a big colander to thaw.  As they thaw, most of the water will leak out of them and your left with mostly just the meat of the tomatoes.  Greatly reduces your cooking time for the sauces.

I would just can the tomatoes plain.  Spices can turn bitter over time in the can.  It's much better to can them plain and then use them to make your sauces fresh in the future.

You will not be disappointed.  That is one of my favorite all time canning recipes.  Try them on Chicken-in-a-Biscuit crackers.  Oh my that is good.
